Avocado Bruschetta

A delicious vegan recipe from Eileen R. of Fayetteville, NY!

Ingredients:

1 Slice of Heidelberg French Peasant Bread
Garlic Powder
Vegan Margarine
Vegan Guacamole
Garlic Oil
Sliced Portabella Mushrooms
Kalamata Olives
Sweet Cherry Tomatoes
Shredded Vegan Cheese
Salt & Pepper

Heidelberg-Avocado-Bruschetta

Directions:

  1. Spread a little vegan margarine on the bread, sprinkle with garlic powder, and lightly toast in the oven.
  2. In a small pan, sauté sliced portabella mushrooms with garlic oil.
  3. Remove the bread from the oven, spread organic guacamole on it, and carefully layer the mushrooms on top.
  4. Chop a few kalamata olives and a few sweet cherry tomatoes then place on top of the bread.
  5. Sprinkle a good quality shredded vegan cheese, and place in the oven just long enough to melt the cheese.
  6. Add salt and pepper to taste and enjoy!
